Introduction
Chapter 5 begins Unit 3, Health and Well-being. The school holds a food festival, and students and parents bring dishes from all over India: sprouts, dhokla, litti-chokha, dal-baati-churma, bajre-ki-khichdi, chhena-poda, ker-sangri, siddu, dosa, vada, jowar upma, ragi laddu and more. Visiting the stalls, children learn about tastes, food groups, balanced meals, water, cooking methods and reading food labels.
What's in this Chapter
Mystery Masala and the six tastes – At the "Mystery Masala" stall, Mukesh and his friends taste Ugadi Pachadi, a traditional food of Andhra Pradesh, Karnataka and Telangana. It has six tastes: sweet (meetha), sour (khatta), salty (namkeen), pungent (teekha), bitter (karva) and astringent (kasaila). Examples: jaggery is sweet, tamarind sour, salt salty, green chilli pungent, neem bitter and raw mango astringent. In Ayurveda these six tastes are called shad rasa, and eating food with all of them is good for health.
Super food – millets – Surbhi remembers her grandmother eating jowar and bajra roti in winter and jau roti in summer. Millets are rich sources of nutrients.
Food groups – No single food has all the nutrients we need, so we eat a variety:
Say 'No' to junk food – Soft drinks, chips, bread pakoda, burgers, pizza and over-processed packaged food have a lot of oil, salt and sugar. Fresh home-cooked food is better.
A balanced plate – A balanced plate has food from all three groups: protective foods the most, then body-building foods, and some energy-giving foods. Every region of India has its own special thali.
Water for health – Water helps digest food, keeps skin and body healthy, and removes waste through urine, sweat and faeces. Water-rich fruits like watermelon and cucumber help too.
Methods of cooking – Food can be steamed (idli, idiyappam), boiled, fried, roasted, grilled or baked. Some foods, like fruit chaat and salads, need no cooking. A solar cooker cooks with sunlight and makes no smoke or ash. A chef is a professional cook; the French word means "head of the kitchen".
Check the label – On packaged food, check the expiry ("best before") date and ingredients.
